toasted almond lemon bars

Today being my first full day of being 24 years of age I have decided to embrace my adulthood. I decided this as I was making my first cup of coffee and was staring at my beautiful shiny food processor. It being beautiful and shiny due to the fact that it had...not...been...used.  Its a hard thing to admit. I've wanted one for so long and I was very excited to un-wrap it on Christmas morning.  You read me correctly. I said Christmas. As in, a holiday that occurred seven months ago.

I had reasons mind you for not using it but it boiled down to my fear of the blades. Silly right? People use them everyday without mishap. Its just that there were all these warning labels and dvds to watch and it was intimidating. To me.

So there I was with my coffee locked in a battle of wills with an inanimate object and I decided that today was going to be the day, sharp spinning blades or no.

I decided on using a recipe for Toasted Almond Lemon bars from the Sweet Melissa baking book. By decided I mean I read a great post by Indecisive Baker and she mentioned using a food processor multiple times. It was a sign. Also, I am loving lemon flavored treats right now.

They came out amazing if I do say so myself though I may have been a tad over enthusiastic about putting the powdered sugar on top.

As for using a food processor? Easy as pie and fairly idiot proof. I can't believe I waited this long.
